  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1/2 cup chopped pecans
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water in a small bowl; let it sit for about 5 minutes.
  2. In a large mixing bowl, combine room temperature vegan butter, brown sugars, maple syrup, and vanilla; mix until creamy.
  3. Add the prepared flax egg and mix well.
  4. Sift together flour, cornstarch, baking powder, cinnamon, and salt; gradually add to the wet mixture until fully combined.
  5. Fold in chopped pecans and form tablespoon-sized balls; roll in additional sugar before placing on a lined baking sheet.
