  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 small red onion, finely chopped
  • 2 cups fresh baby spinach, roughly chopped
  • 1 cup mushrooms (cremini or button), finely diced
  • 2 garlic cloves, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick each sweet potato with a fork and bake directly on the rack for 45–50 minutes until tender.
  3. While baking, heat olive oil in a skillet over medium heat. Sauté chopped onion until soft (3–4 minutes), add diced mushrooms and minced garlic; cook until mushrooms release moisture (4–5 minutes).
  4. Stir in spinach and cook until wilted (about 2 minutes). Season with salt, pepper, and smoked paprika.
  5. Once baked, cut each sweet potato in half lengthwise and scoop out the flesh into a mixing bowl; mash lightly.
  6. Mix in the sautéed vegetable filling and crumbled feta until well combined.
  7. Spoon the mixture back into the sweet potato skins and place them in a baking dish.
  8. In a saucepan, melt butter over low heat; stir in parsley, oregano, and garlic powder. Drizzle over stuffed potatoes.
  9. Bake again for 10–12 minutes until heated through.
