Instructions

  1. Brew and cool espresso to room temperature.
  2. In a mixing bowl, combine mascarpone cheese, crushed digestive biscuits, cooled espresso, sugar, and vanilla extract until well mixed.
  3. Refrigerate the mixture for about one hour to firm it up.
  4. Using a cookie scoop, form small balls from the chilled mixture and place them on a parchment-lined baking sheet.
  5. Melt dark chocolate using a double boiler or microwave; dip each truffle in melted chocolate and let excess drip off before returning them to the parchment.
  6. Chill coated truffles in the refrigerator for about 30 minutes to set.
