  • 6 tablespoons (75 g) granulated sugar (divided)
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 cup (245 g) whole milk (warmed (about 105-115°F))
  • 7 tablespoons (99 g) unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • 1 large egg (room temperature)
  • 3 ½ cups (444.5 g) bread flour
  • ¼ cup (½ stick / 57 g) unsalted butter (softened)
  • 2 tablespoons confectioners' sugar
  • 2 tablespoons honey
  • ½ teaspoon cinnamon

Instructions

  1. In a mixing bowl, combine warmed water with 1 tablespoon of sugar. Sprinkle yeast on top and let sit for about 5 minutes until frothy.
  2. In another bowl, combine warmed milk with melted butter and remaining sugar, then add the frothy yeast mixture.
  3. In a separate bowl, whisk together bread flour and kosher salt.
  4. Gradually add the flour mixture to the wet ingredients while mixing, then add the egg and knead until smooth.
  5. Cover the dough with a cloth and let it rise in a warm place for about 90 minutes or until doubled in size.
  6. Punch down the dough gently, divide into 12 pieces, shape into balls, and place on parchment-lined baking sheet.
  7. Cover and let rise again for 30 minutes until puffy.
  8. Preheat oven to 350°F (175°C) and bake rolls for about 15 minutes until golden brown.
  9. For cinnamon honey butter, mix softened butter with confectioners' sugar, honey, and cinnamon until creamy.
  10. Brush baked rolls with remaining melted butter before serving warm alongside cinnamon honey butter.
