Ingredients

Scale
  • 500g chicken breast, cubed
  • 2 cups broccoli florets
  • 1 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch + 2 tablespoons water (for slurry)
  • Olive oil, salt, and pepper to taste

Instructions

  1. Prepare the Rice: Rinse the rice until the water runs clear. In a pot, combine the rice with water and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
  2. Steam the Broccoli: Boil salted water in a pot, add broccoli florets, and steam for about 5 minutes until tender-crisp.
  3. Cook the Chicken: Heat olive oil in a non-stick skillet over medium-high heat. Season cubed chicken with salt and pepper, sauté until golden brown (6-8 minutes).
  4. Make the Sauce: Combine soy sauce, honey, rice vinegar, brown sugar, garlic, and ginger in a bowl. Pour over cooked chicken and simmer for 2-3 minutes.
  5. Thicken the Sauce: Mix cornstarch with water to form a slurry. Stir into the pan until the sauce thickens.
  6. Assemble: Serve chicken over rice with steamed broccoli on the side. Drizzle extra teriyaki sauce if desired.
