  • 1 cucumber, sliced
  • 1 tomato, sliced
  • 1 zucchini, sliced into rounds
  • 23 slices of semi-hard cheese (like cheddar or gouda)
  • 1 tbsp olive oil or butter
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat. Add zucchini slices and sauté for about 2-3 minutes per side until golden brown. Season with salt and pepper; remove from skillet.
  2. In the same skillet, crack in the eggs and cook sunny-side-up or over-easy until whites are set but yolks remain runny. Season with salt and pepper.
  3. On a serving plate, arrange cucumber, tomato, cheese, and sautéed zucchini. Top with cooked eggs and sprinkle with parsley.
  4. Serve immediately while warm.
