  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese

  • 1/4 cup chopped chives
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  2. Bake the potatoes on a baking sheet for 45-60 minutes until tender.
