  • 1 cup unsalted butter
  • 4 egg whites
  • 4 whole eggs
  • 4 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda
  • 1½ cups buttermilk
  • 3 cups sugar
  • 2 tsp vanilla extract
  • ½ tsp almond extract
  • Zest of 1 orange (optional)
  • Neon gel food coloring in orange, purple, and black

Instructions

  1. Preheat your oven to 350°F (175°C) and grease/flour a large Bundt pan.
  2. In a medium bowl, whisk together flour, baking powder, salt, and baking soda.
  3. In a large bowl, cream together unsalted butter and sugar until fluffy.
  4. Add egg whites and whole eggs one at a time, mixing well between additions.
  5. Stir in vanilla extract, almond extract, and optional orange zest.
  6. Alternately add flour mixture and buttermilk to the creamed mixture until combined.
  7. Divide batter into three bowls; color one portion neon orange, another neon purple, and leave one black.
  8. Pour spoonfuls of each colored batter into the Bundt pan and gently swirl with a knife.
  9. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for about 10 minutes before transferring to a cooling rack.
