  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce
  • ½ tsp lime juice

Instructions

  1. Pound chicken breasts to even thickness. Rub with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat grill to medium-high. Grill chicken for about 4–5 minutes on each side until the internal temperature reaches 165°F (74°C). Add cheese during the last minute to melt.
  3. Mix mayonnaise with adobo sauce and lime juice in a small bowl until smooth.
  4. Toast brioche buns on the grill or in a skillet until golden brown.
  5. Spread chipotle mayo on both sides of each bun. Layer with sliced avocado, grilled chicken topped with melted cheese, and pickled jalapeños.
  6. Serve hot alongside fries or a salad.
