  • 400 g spaghetti
  • 2 large red bell peppers
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 120 ml heavy cream
  • 1 tbsp tomato paste
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 120 g chicken sausage, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 220°C (430°F). Roast the bell peppers on a baking tray for 15–20 minutes until blistered.
  2. Cook spaghetti in salted boiling water according to package instructions until al dente; reserve some pasta water before draining.
  3. In a skillet, heat olive oil and sauté chicken sausage until crispy. Set aside.
  4. In the same skillet, add more olive oil and sauté onion and garlic until softened. Add roasted bell peppers and cook for an additional 2 minutes.
  5. Blend the bell pepper mixture with heavy cream, tomato paste, smoked paprika, salt, and pepper until smooth.
  6. Return the sauce to the skillet over low heat and stir in the cooked chicken sausage.
  7. Toss drained spaghetti in the sauce, adding reserved pasta water as needed for desired consistency.
  8. Serve garnished with fresh parsley.
