  • 1 jalapeño, seeded and diced (optional)
  • 2 cans (15 oz each) great northern beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • Salt and black pepper to taste
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup heavy cream (or half-and-half)
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped
  • Sliced jalapeños
  • Lime wedges
  • Tortilla chips or strips

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, minced garlic, and jalapeño until softened (about 4 minutes).
  2. Stir in drained great northern beans, cannellini beans, diced green chilies, chicken broth, shredded chicken, and spices. Bring to a gentle simmer.
  3. Reduce heat and let cook for 20–25 minutes for flavors to meld.
  4. For extra creaminess, blend about 1 cup of the soup until smooth; return to the pot.
  5. Stir in sour cream (or Greek yogurt), heavy cream (or half-and-half), and Monterey Jack cheese until melted.
