  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  2. Beat butter in a stand mixer until creamy, then add brown sugar, molasses, and pumpkin puree. Mix until combined.
  3. Add the egg and mix well.
  4. Gradually incorporate dry ingredients until just combined; avoid overmixing.
  5. Chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F and line baking sheets with parchment paper.
  7. Roll chilled dough into balls, coat in sugar, flatten slightly on baking sheets.
