  • 8 flour tortillas
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter (divided)
  • ½ cup red bell pepper, diced
  • ½ cup white onion, diced
  • 2 cloves garlic, minced
  • 1½ cups chicken broth
  • ½ cup salsa verde
  • 1½ cups shredded Monterey Jack cheese (or Pepper Jack for spice)
  • 1 cup sour cream
  • ¼ cup fresh cilantro, chopped
  • Juice of 2 limes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a non-stick skillet, melt 2 tbsp butter over medium heat. Sauté onions, bell pepper, and garlic until translucent.
  3. Add shrimp along with salt and chili powder; cook until pink (3–5 minutes). Stir in lime juice and cilantro.
  4. In a saucepan, melt remaining butter; whisk in flour and gradually add chicken broth until thickened.
  5. Remove from heat; stir in salsa verde and cheese until melted. Fold in sour cream.
  6. Fill each tortilla with shrimp mixture, roll tightly, and place seam-side down in a baking dish.
  7. Pour sauce over enchiladas; add more cheese if desired.
  8. Bake for 20–25 minutes until bubbly and golden.
