  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • 2 cups cherry tomatoes (halved)
  • 8 ounces fresh mozzarella (sliced or in balls)
  • 1/4 cup fresh basil leaves (torn)
  • Optional: Balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken breasts with 2 tablespoons of olive oil, minced garlic, salt, and pepper.
  3. Arrange the seasoned chicken on one side of a large sheet pan and scatter halved cherry tomatoes on the other side. Drizzle with remaining olive oil and season tomatoes with salt and pepper.
  4. Roast for about 20 minutes until chicken reaches an internal temperature of 165°F (74°C) and tomatoes are blistered.
  5. Top each chicken breast with mozzarella slices and return to the oven for an additional 5 minutes until cheese is melted.
  6. Remove from the oven, sprinkle torn basil over the dish, and drizzle with balsamic glaze if desired before serving.
