  • 1 cup chopped bell peppers (mixed colors)
  • 1 cup sliced zucchini
  • 1 medium red onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp paprika
  • 2 cups cooked rice (white or brown)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine bell peppers, zucchini, red onion, olive oil, garlic, salt, pepper, and paprika. Toss until evenly coated.

  5. Once the vegetables are done roasting, mix them with the cooked turkey in the skillet.
