  • 1 pound fresh sausage (chicken or turkey)
  • 1 cup warm water (110°F to 115°F)
  • 2 tablespoons granulated sugar
  • 2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup baking soda (for boiling solution)
  • 1 large egg (beaten, for topping)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast; let it sit for about 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture and mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Cook the sausage in a skillet over medium heat until browned; drain excess fat.
  6. Punch down the risen dough and divide into small pieces. Flatten each piece, add sausage filling, fold over and seal.
  7. Boil water in a large pot; add baking soda. Boil pretzel bites for about 30 seconds on each side; remove with a slotted spoon.
  8. Brush tops with beaten egg and sprinkle with coarse sea salt before baking for 12-15 minutes until golden brown.
