  • 1 tablespoon olive oil
  • 21/4 cups mirepoix (diced carrots, celery, yellow onion)
  • 1 teaspoon minced garlic
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups freshly shredded extra-sharp Cheddar cheese
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup sour cream

Instructions

  1. In a large pot over medium-high heat, cook the turkey sausage until browned. Transfer to a plate.
  2. In the same pot, melt one tablespoon of butter and sauté the mirepoix until softened. Add minced garlic and cook briefly.
  3. Stir in chopped potatoes, chicken stock, salt, pepper, and dried herbs; boil then simmer until potatoes are tender.
  4. In a separate medium pot, melt four tablespoons of butter and whisk in flour to create a roux. Gradually add milk and cook until thickened.
  5. Combine the creamy mixture into the soup pot along with the cooked sausage and shredded cheese; stir until melted.
