1 salmon fillet (150-180g)
2 medium potatoes, peeled and diced
1 cup broccoli florets
1 cup sliced carrots
1 tsp olive oil or butter
Salt and pepper, to taste
1 tbsp butter
2 tbsp milk or cream for extra richness
Instructions
Season the salmon with salt and pepper. Heat olive oil or butter in a skillet over medium heat and pan-fry the salmon for 3-4 minutes per side until cooked through.
Boil peeled and diced potatoes in salted water for 12-15 minutes until fork-tender. Drain and mash with butter, milk, and salt.
Steam sliced carrots for 5-6 minutes. Add broccoli florets to steam for an additional 4-5 minutes until bright green.
