  • 1 salmon fillet (150-180g)
  • 2 medium potatoes, peeled and diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 tsp olive oil or butter
  • Salt and pepper, to taste
  • 1 tbsp butter
  • 2 tbsp milk or cream for extra richness

Instructions

  1. Season the salmon with salt and pepper. Heat olive oil or butter in a skillet over medium heat and pan-fry the salmon for 3-4 minutes per side until cooked through.
  2. Boil peeled and diced potatoes in salted water for 12-15 minutes until fork-tender. Drain and mash with butter, milk, and salt.
  3. Steam sliced carrots for 5-6 minutes. Add broccoli florets to steam for an additional 4-5 minutes until bright green.
  4. Serve the salmon alongside creamy mashed potatoes and vibrant vegetables.
