  • 3/4 cup almond flour
  • 2 tbsp unsweetened cocoa powder
  • 2 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 4 oz cream cheese (softened)
  • 2 tbsp unsalted butter (softened)
  • Red gel food coloring

Instructions

  1. Sift together powdered sugar, almond flour, and cocoa powder in a mixing bowl.
  2. Whip egg whites in an electric mixer until foamy; gradually add granulated sugar and beat until stiff peaks form.
  3. Add vanilla extract and red gel food coloring to egg whites, then gently fold in the dry mixture until combined.
  4. Pipe small rounds onto lined baking sheets; let rest for 30–45 minutes.
  5. Preheat oven to 300°F (150°C) and bake shells for 15–17 minutes until set; cool completely.
  6. Beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  7. Fill half the macaron shells with frosting and sandwich with remaining shells.
