  • 1 cup rolled oats
  • 1 cup raw almonds (or cashews)
  • 23 tablespoons fresh ginger, grated
  • 2 tablespoons chia seeds or flaxseeds
  • 3 tablespoons shredded coconut (plus extra for rolling, optional)
  • 2 tablespoons nut butter (almond or cashew)
  • 2 tablespoons coconut oil, melted
  • 23 tablespoons honey or maple syrup
  • Pinch of salt

Instructions

  1. Line an 8×8-inch baking dish with parchment paper.
  2. In a food processor, pulse almonds and oats until finely ground.
  3. Add dried apricots, ginger, chia seeds or flaxseeds, shredded coconut, nut butter, coconut oil, sweetener, and salt. Blend until the mixture sticks together when pressed.
  4. If too dry, add warm water; if too sticky, incorporate more oats.
  5. Press the mixture evenly into the prepared pan and smooth the top.
  6. Refrigerate for at least 1 hour before cutting into bars.
