  • 1 ½ cups (150g) powdered sugar
  • 3 large egg whites, room temperature
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon cream of tartar
  • ½ teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • Orange gel food coloring (optional)
  • ½ cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 3 tablespoons pumpkin purée (excess liquid blotted out with paper towels)
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Preheat oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar into a bowl; mix in pumpkin pie spice.
  3. In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar and cream of tartar until stiff peaks form. Mix in vanilla.
  4. Gently fold the dry mixture into the meringue until the batter flows like lava.
  5. Pipe 1-inch circles onto baking sheets and let rest for 30–45 minutes until a skin forms.
  6. Bake for 15–18 minutes; cool completely before removing from parchment.
  7. For filling, beat softened butter and powdered sugar until smooth; mix in pumpkin purée, vanilla, and spice until fluffy.
  8. Assemble by piping filling between macaron shells.
