  • 2 cups granulated sugar
  • 2 eggs

  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In an electric mixer bowl, combine room temperature butter and pumpkin puree; mix well. Then add granulated sugar, eggs, and vanilla; combine thoroughly.
  4. Gradually add the dry mixture to the wet mixture in three parts, alternating with milk until just combined.
  5. For the crumb topping, mix cold cubed butter with brown sugar, flour, and spices until crumbly.
  6. Pour half of the batter into the prepared dish, layer with half of the crumb mixture, then add remaining batter topped with crumbs. Bake for 45-55 minutes until a toothpick comes out clean.
