  • 1 tablespoon pumpkin spice
  • ½ teaspoon salt
  • 3 oz cream cheese (room temperature)
  • 12 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • For the Filling: 1 large egg, ¼ cup brown sugar, pinch of salt, ½ teaspoon pumpkin spice, ¼ cup whole milk, ½ cup pumpkin puree, ¼ teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling (78g)

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, pumpkin spice, and salt; set aside.
  3. In another bowl, use an electric mixer to blend cream cheese and butter until smooth. Gradually add sugars and mix until fluffy. Add egg yolk and vanilla; mix well.
  4. Slowly incorporate dry ingredients into the wet mixture until combined.
  5. Roll dough into balls about 2 inches in diameter and coat each in coarse sugar before placing on the cookie sheet.
  6. In a separate bowl, whisk together all filling ingredients until smooth.
  7. Create indents in each cookie ball and fill with about one tablespoon of the pumpkin filling.
  8. Bake for approximately 15 minutes or until edges are lightly golden but centers remain soft.
  9. Cool on a rack before serving.
