  • 450 g dark brown sugar
  • 560 g pumpkin purée
  • 150 g oil
  • 4 eggs
  • 2 tsp vanilla extract
  • 300 g butter
  • 150 g full-fat cream cheese
  • 540 g powdered sugar
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, mix dark brown sugar, pumpkin purée, oil, eggs, and vanilla until smooth using an electric mixer.
  4. Gradually combine the dry ingredients into the wet mixture until just combined.
  5. Divide the batter between prepared pans and bake for about 25 minutes until a toothpick comes out clean.
  6. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. For frosting, beat butter and cream cheese until smooth; gradually add powdered sugar and cinnamon until fluffy.
  8. Assemble by layering one cake with frosting, adding the second layer on top, then frost the entire cake.
