  • 1 1/2 lbs. potatoes
  • 1 lb. green beans
  • 3 tbsp. olive oil (divided)
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • 1/2 tbsp. taco seasoning
  • 1/2 tbsp. oregano

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potatoes, then mix them in a bowl with 1½ tbsp olive oil, taco seasoning, oregano, salt, and pepper.
  3. Spread the seasoned potatoes onto a baking sheet and roast for 15 minutes.
  4. In the same bowl (no need to wash), combine green beans with the remaining olive oil, minced garlic, and salt.
  5. After 15 minutes, add the green beans to the baking sheet with the potatoes, gently mixing everything together.
  6. Return to the oven for an additional 20-30 minutes until both vegetables are tender.
