  • 200 g chopped pecans
  • 150 g brown sugar
  • 100 g butter
  • 60 ml heavy cream
  • 250 g mascarpone cheese (or light cream cheese)
  • 250 ml heavy cream
  • Vegan gelling agent (as per instructions)

Instructions

  1. Prepare the Base Layer: Mix melted butter, brown sugar, and crushed biscuits in a bowl. Press into a baking dish.
  2. Make the Pecan Filling: Melt butter and mix with brown sugar until dissolved. Stir in heavy cream, vanilla extract, chopped pecans, and salt. Spread over the biscuit base.
  3. Prepare the Cream Layer: Whip mascarpone cheese with heavy cream and powdered sugar until soft peaks form. Fold in the dissolved vegan gelatin and spread over the pecan layer.
