  • 1 white fish fillet (tilapia, cod, or sole)
  • 1 cup baby potatoes or Yukon gold, cubed
  • 1 ripe avocado
  • 1 tsp olive oil or butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Garlic powder to taste
  • Smoked paprika to taste
  • 1 tbsp chopped tomato
  • 1 tbsp chopped red onion or green onion
  • Lime juice to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and toss cubed potatoes in olive oil, smoked paprika, salt, and pepper. Roast on a baking sheet for 25–30 minutes, flipping halfway through.
  2. While the potatoes roast, season the fish fillet with salt, pepper, garlic powder, and paprika. Heat olive oil in a non-stick skillet over medium heat and sear the fish for 3–4 minutes on each side until cooked through.
  3. For the guacamole, mash the avocado in a mixing bowl. Stir in chopped tomato, onion, lime juice, and salt to taste.
  4. Plate the pan-seared fish alongside roasted potatoes and a generous scoop of guacamole.
