  • 4 chicken breasts (about 600g)
  • 2 tablespoons olive oil
  • Salt & pepper, to taste
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 200g mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon flour
  • 250ml chicken stock
  • 1 teaspoon dried thyme
  • 800g potatoes, peeled and cubed
  • 50g butter
  • 100ml milk

Instructions

  1. Boil cubed potatoes in salted water until tender. Drain and mash with butter and milk; season to taste.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken for 5-7 minutes on each side until golden brown; remove from skillet.
  3. In the same skillet, sauté onions, bell peppers, and mushrooms for about 5 minutes. Add garlic and cook for an additional 30 seconds.
  4. Sprinkle flour over vegetables; stir well before gradually adding chicken stock and thyme. Simmer until thickened.
  5. Return chicken to the skillet with gravy and serve alongside creamy mashed potatoes.
