- 1/4 cup brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 1 large egg
- 1 tsp vanilla extract
- 1 cup Oreo cookies (chopped)
- 1/2 cup mini vegan marshmallows
- 1/2 cup semi-sweet chocolate chips
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt; gradually add to the wet mixture until just combined.
- Gently fold in chopped Oreos, mini vegan marshmallows, and chocolate chips.
- Scoop tablespoon-sized portions onto prepared baking sheets, spacing them at least two inches apart.
- Bake for 10-12 minutes until edges are golden but centers remain soft. Cool slightly before transferring to wire racks.
