  • 4 skinless salmon fillets
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan
  • freshly ground black pepper (for serving)
  • chili flakes (for serving)

Instructions

  1. Pat salmon dry and season with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil and butter in a nonstick skillet over medium-high heat; sear salmon for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté chopped onion and minced garlic until soft. Stir in dried thyme.
  4. Add orzo to the skillet; toast for about 1 minute.
  5. Pour in chicken broth; bring to a boil then reduce heat to simmer for about 8 minutes until orzo is nearly al dente.
  6. Stir in spinach until wilted then add lemon juice and Parmesan; return salmon to skillet and heat through for an additional 2-3 minutes.
  7. Serve warm topped with freshly ground black pepper and chili flakes.
