  • 2 cloves garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 1 teaspoon dried thyme

  • 6 cups chicken broth
  • 2 cups cooked chicken (shredded)
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • to taste salt
  • to taste black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté for 5 minutes until softened.
  2. Stir in minced garlic and cook for 1 minute. Add dried thyme and basil.
  3. Pour in chicken broth; bring to a boil, then reduce to a simmer.
  4. Add shredded chicken and gnocchi; cook for 5–7 minutes until gnocchi float to the top.
  5. Stir in fresh spinach and heavy cream; cook for another 2–3 minutes. Season with salt and pepper to taste.
  6. Serve hot, garnished with optional grated Parmesan cheese.
