  • 1 can (14.75 ounces) pink salmon, drained and flaked
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/4 cup onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons mayonnaise (optional)
  • 2 tablespoons olive oil or butter for frying

Instructions

  1. In a large bowl, combine flaked salmon, breadcrumbs, onion, parsley, eggs, garlic powder, salt, pepper, and mayonnaise (if using). Mix until just combined.
  2. Shape the mixture into 6–8 uniform patties.
  3. Heat olive oil or butter in a skillet over medium heat.
  4. Cook patties for 3–4 minutes per side until golden brown and crisp.
  5. Drain on paper towels and serve warm with tartar sauce, lemon wedges, or over a fresh salad.
