  • ½ cup unsalted butter
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups whole milk
  • 2 cinnamon sticks
  • 4 egg yolks
  • ½ cup sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons flour
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter (for filling)
  • Ground cinnamon (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, sugar, and salt; bring to a boil. Add flour all at once and stir until dough pulls away from the pan.
  3. Remove from heat, cool briefly, then mix in eggs one at a time until smooth. Pipe into logs on the baking sheet and bake for 20–25 minutes until golden brown.
  4. For the filling, heat milk and steep with cinnamon sticks for flavor. In another bowl, whisk egg yolks with sugar and cornstarch. Combine with warm milk and cook until thickened. Stir in vanilla and butter.
  5. Once the éclairs are cool, slice them open and fill with the custard mixture. Dust with ground cinnamon before serving.
