  • 3 large apples
  • 1 onion
  • 5 cloves garlic
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • 3 tablespoons stone ground Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Core and chop apples into ½” cubes. Slice carrots into ¼” thick pieces, dice the onion, and finely chop the garlic.
  3. In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme until well combined.
  4. Add the chopped vegetables to the bowl and toss until evenly coated.
  5. Spread the mixture on a baking sheet in an even layer and roast for about 15 minutes.
  6. Flip the veggies and continue roasting for another 10 to 15 minutes until tender.
