  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 1/2 cup teriyaki sauce
  • 1/2 cup mango puree (fresh or canned)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey (optional)
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • Fresh mango slices & green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine the teriyaki sauce, mango puree, soy sauce, honey (if using), grated ginger, minced garlic, and red pepper flakes. Simmer for about 3–5 minutes until the glaze thickens slightly.
  3. Place the salmon fillets on the lined baking sheet and brush generously with the prepared glaze.
  4. Bake in the preheated oven for 12–15 minutes or until the salmon flakes easily with a fork.
  5. Brush with any remaining glaze before serving, garnishing with fresh mango slices and chopped green onions.
