  • 2 medium fresh lemons (zested and juiced)
  • 2 tbsp extra virgin olive oil
  • 8 oz fresh mozzarella cheese (torn into pieces)
  • ¼ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 475°F (245°C).
