  • 3/4 cup unsalted butter, softened
  • 3/4 cup milk
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • For the Topping: 2 cups heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, sift together the flour, baking powder, and salt.
  3. In a large mixing bowl, cream the softened butter and sugar until fluffy. Add eggs one at a time, followed by lemon zest and vanilla.
  4. Gradually add the dry ingredients alternating with milk and lemon juice until just combined.
  5. Pour the batter into the prepared pan and bake for 40-45 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool before preparing whipped cream by beating it with powdered sugar until stiff peaks form.
  7. Once cooled, dust the cake with powdered sugar and pipe whipped cream around the edges.
