  • 1 cup heavy cream (36% M.F.), chilled
  • 1 tablespoon + 1 teaspoon granulated sugar
  • 1 teaspoon cotton candy extract
  • 6 egg whites
  • 55 grams granulated sugar (for meringue)
  • 1/4 teaspoon cream of tartar
  • 90 ml whole fat milk
  • 20 ml vegetable oil
  • 70 grams cake flour

Instructions

  1. Preheat your oven to 325°F (163°C) and line an 8 X 12" baking pan with parchment paper.
  2. In one bowl, whisk together wet ingredients (milk, oil, and sugar). In another bowl, sift dry ingredients (cake flour and salt).
  3. Combine wet and dry mixtures gently until just incorporated.
  4. Whip egg whites with cream of tartar until soft peaks form, then gradually add sugar until stiff peaks form.
  5. Fold meringue into the batter gently in three additions.
  6. Pour the batter into the prepared pan and bake for 10-12 minutes until done.
  7. Cool the cake before spreading whipped cream filling over one side and rolling it up.
