  • 1 lb ground lamb or beef
  • ½ cup breadcrumbs
  • 1 egg
  • 4 cloves garlic (2 minced for meatballs, 2 minced for gravy)
  • 1 onion (finely chopped and 1 diced)
  • 2 carrots (sliced)
  • 2 potatoes (diced)
  • 3 cups beef or vegetable broth
  • 1 tbsp tomato paste
  • Olive oil and butter for frying

Instructions

  1. In a mixing bowl, combine ground lamb or beef with breadcrumbs, egg, minced garlic, finely chopped onion, Worcestershire sauce, thyme, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a large skillet over medium heat and sear meatballs until browned on all sides. Remove and set aside.
  3. In the same skillet, melt butter and sauté diced onions, sliced carrots, and diced potatoes until softened. Add minced garlic and cook for another minute.
  4. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, pepper, and pour in broth; bring to a simmer.
  5. Sprinkle flour over vegetables; stir until well mixed and let simmer for about five minutes until thickened.
  6. Return meatballs to the pot and simmer for an additional 10–15 minutes until cooked through.
  7. Garnish with fresh parsley before serving warm.
