  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix together mashed bananas, crushed pineapple, vegetable oil, granulated sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry mixture to the wet ingredients and stir until just combined; avoid overmixing.
  5. Fold in optional nuts and coconut if desired.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 55–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
