  • 1 tablespoon taco seasoning
  • 1/2 cup diced tomatoes
  • 12 mini corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped cilantro

Instructions

  1. Heat olive oil in a frying pan over medium heat. Sauté the diced onion until translucent (about 3-4 minutes), then add minced garlic and cook for an additional minute.
  2. Add ground chicken to the pan, breaking it apart as it cooks. Stir until browned (5-7 minutes).
  3. Sprinkle taco seasoning over the mixture and stir well. Add diced tomatoes and simmer for another 2-3 minutes.
  4. Preheat oven to 375°F (190°C). Warm tortillas in the microwave for about 30 seconds.
  5. Fill each tortilla with the chicken mixture and shredded cheese, folding gently.
  6. Place filled tortillas in a greased muffin tin or baking sheet and bake for 10-12 minutes until golden brown.
  7. Remove from the oven and garnish with chopped cilantro before serving.
