  • 4 4-6 ounce salmon filets
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado
  • 1 cucumber (sliced)
  • 1 cup edamame (cooked)
  • 1/2 cup sriracha mayo

Instructions

  1. Cut salmon into 1-inch cubes, if desired remove the skin.
  2. In a large bowl, whisk together soy sauce or tamari, honey, sriracha, minced garlic, and water until well combined.
  3. Add salmon cubes to the marinade and let sit for at least 20 minutes.
  4. Heat oil in a large skillet over medium-high heat and cook the marinated salmon for 2-3 minutes on each side until crispy.
  5. Pour reserved marinade into the skillet and cook until thickened.
  6. Assemble bowls with cooked rice, salmon cubes, avocado slices, cucumber, edamame, and drizzle with sriracha mayo.
