  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1 cup canned chickpeas (rinsed and dried)

  • 4 oz halloumi cheese (sliced)

Instructions

  1. Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, honey, curry powder, salt, and pepper in a mixing bowl until well-coated. Spread on a baking sheet and roast for about 20 minutes until golden.
  2. While the cauliflower roasts, toss the chickpeas with paprika and a pinch of salt in another bowl. Spread them on a separate baking sheet or grill pan and roast or pan-fry for about 15-20 minutes until crunchy.
  3. Heat a grill pan over medium heat. Grill halloumi slices for 2-3 minutes on each side until golden brown.
  4. Serve warm by arranging roasted cauliflower as the base, topped with grilled halloumi slices and crunchy chickpeas.
