  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3 cups shredded sweetened coconut
  • 15 ounces soft caramels
  • 3 tablespoons whole milk
  • 8 ounces dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and sugar until smooth. Add flour, baking powder, salt, milk, and vanilla extract; mix until combined.
  3. Roll the dough into small balls (about 1 inch in diameter) and flatten slightly on the baking sheet. Create a hole in the center of each cookie.
  4. Bake for about 15 minutes or until lightly golden. Allow cookies to cool completely on a wire rack.
  5. In a saucepan over medium heat, melt soft caramels with whole milk and salt until smooth. Stir in shredded coconut.
  6. Spoon the coconut mixture onto each cooled cookie and let it set.
  7. Melt dark chocolate and drizzle generously over each cookie before allowing to cool completely.
