  • 1/2 cup chopped onion

Instructions

  1. In a large bowl, whisk together cornmeal, flour, baking powder, salt, black pepper, and cayenne pepper.
  2. In another bowl, mix buttermilk and the egg until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until just combined; avoid overmixing.
  4. Gently fold in the chopped onion.
  5. Heat about 2 inches of vegetable oil in a deep pot to 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil and fry in batches for about 3-4 minutes until golden brown.
  7. Remove with a slotted spoon and drain on paper towels before serving warm.
