  • 4 chicken drumsticks
  • 2 tablespoons olive oil
  • 4 medium potatoes, peeled & cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • Salt to taste

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a large bowl, combine the chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and black pepper. Toss until well coated.
  3. In another bowl, mix together the cubed potatoes, sliced carrots, bell pepper, and onion with olive oil and seasonings.
  4. Spread the seasoned veggies in a baking dish and place the marinated chicken on top.
  5. Roast in the oven for 50-55 minutes, turning the chicken halfway through for even cooking.
  6. Garnish with fresh parsley before serving hot.
