  • 1 cup baby potatoes, halved
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • 1 tsp olive oil
  • 1 tsp whole-grain mustard
  • 1 tsp garlic powder
  • 1 tsp dried herbs (parsley, thyme, or oregano)
  • Salt & pepper, to taste
  • Juice of lemon + lemon wedge for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until golden brown.
  3. Season the salmon with salt, pepper, whole-grain mustard, dried herbs, and lemon juice. Heat a skillet over medium-high heat and sear the salmon skin-side down for about 4 minutes per side until cooked through.
  4. Drizzle cherry tomatoes and broccoli with olive oil; roast alongside potatoes during the last 10-12 minutes or sauté until tender.
  5. Serve the salmon alongside roasted potatoes and veggies; garnish with parsley and a lemon wedge.
