  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • ½ cup semi-sweet chocolate chips (optional)
  • ¼ cup chopped walnuts or pecans (optional)
  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips for ganache
  • 1 tsp vanilla extract for ganache

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together melted butter and sugar until well combined. Beat in eggs one at a time, followed by vanilla extract.
  3. Sift together cocoa powder, all-purpose flour, salt, and baking powder into the wet mixture and mix gently until just combined.
  4. Fold in optional chocolate chips or nuts if desired.
  5. Divide the batter evenly among the lined muffin cups. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  6. Allow cupcakes to cool completely before topping with ganache made from heating cream and melting chocolate chips together.
