  • Olive oil
  • Salt
  • Ricotta cheese
  • Fresh basil
  • Lemon zest
  • Cherry tomatoes (optional)

Instructions

  1. Wash and slice the zucchinis lengthwise into thin strips.
  2. Brush each strip lightly with olive oil and sprinkle with salt.
  3. Preheat your grill or grill pan over medium heat. Grill zucchini strips for 2-3 minutes on each side until tender and slightly charred.
  4. In a mixing bowl, combine ricotta cheese, chopped basil, lemon zest, salt, and pepper. Mix until creamy.
  5. Roll each grilled zucchini strip around a spoonful of the ricotta mixture.
  6. For optional roasted tomatoes, slice cherry tomatoes in half, drizzle with olive oil and salt, then roast in a preheated oven at 375°F (190°C) for 15-20 minutes.
