  • 1 kg chicken thighs, cubed
  • 2 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp coconut cream
  • 6 tbsp coconut cream (for glaze)
  • 1½ tbsp honey
  • Optional: peanut sauce ingredients (natural peanut butter, rice vinegar, red curry paste)

Instructions

  1. In a mixing bowl, combine the ginger, garlic, soy sauces, sugar, and coconut cream to create the marinade.
  2. Add the cubed chicken and toss until well-coated. Marinate for at least 30 minutes (up to 4 hours).
  3. Preheat the grill to medium-high heat.
  4. Thread marinated chicken onto skewers with small gaps between pieces.
  5. Grill skewers for 4–5 minutes per side until fully cooked.
  6. Brush with the glaze made from whisking together coconut cream, honey, and soy sauce before serving.
